Homemade Cinnamon Toast Crunch Cereal

Lets jump right into it and forever stay away from the processed cereals produced with low quality, and harmful ingredients!

Ingredients:

  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 cup (60g) whole wheat flour (I like to mill my own flour)
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup (60ml) milk
  • 1/4 cup (60ml) honey
  • 2 tablespoons (30ml) melted coconut oil or butter
  • 1 teaspoon vanilla extract

Cinnamon Sugar Coating:

  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (16g) ground cinnamon

Simple Syrup Spray:

  • 1/2 cup (100g) granulated sugar
  • 1/2 cup hot water

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (205°C) and line two baking sheets with parchment paper.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, cinnamon, salt, and baking soda until well combined.
  3. Combine the Wet Ingredients: In a separate bowl, mix the milk, honey, melted coconut oil (or butter), and vanilla extract until well combined.
  4. Make the Dough: Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more flour until it is manageable.
  5. Roll Out the Dough: Divide the dough into two portions. Roll out each portion between two sheets of parchment paper until it is about 1/8 inch thick. Remove the top parchment paper.
  6. Cut into Squares: Using a pizza cutter or sharp knife, cut the dough into small squares (about 1/2 inch by 1/2 inch) to resemble cereal pieces. Carefully transfer the parchment paper with the cut dough onto the baking sheets.
  7. Bake: Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. Keep an eye on them to prevent burning.
  8. Prepare the Cinnamon Sugar Coating: While the cereal is baking, mix together the granulated sugar and ground cinnamon in a small bowl. Have the melted coconut oil (or butter) ready.
  9. Coat the Cereal: Immediately after removing the cereal from the oven, brush the pieces with the melted coconut oil (or butter) and sprinkle generously with the cinnamon sugar mixture. Toss to coat evenly.
  10. Cool and Store: Allow the cereal to cool completely on the baking sheets. Once cooled, break apart any pieces that are stuck together and store in an airtight container.

Tips for Perfect Homemade Cereal:

  • Even Thickness: Roll the dough out evenly to ensure the cereal pieces bake uniformly.
  • Watch the Oven: The cereal can go from golden brown to burnt quickly, so keep a close eye on it during baking.
  • Store Properly: Store the cereal in an airtight container to keep it crispy.

Enjoy your homemade Cinnamon Toast Crunch cereal with milk, or simply snack on it by itself. It’s a delightful way to start your day or enjoy a crunchy, sweet treat. Happy baking!
